Drivers of meat consumption

Increasinggloballevelsofmeatconsumptionareathreattotheenvironmentandtohumanhealth.Toidentify
measuresthatmaychangeconsumptionpatternstowardsmoreplant-basedfoods,itisnecessarytoimproveour
understandingofthecausesbehindthedemandformeat.Inthispaperweusedatafrom137differentcountries
toidentifyandassessfactorsthatinfluencemeatconsumptionatthenationallevelusingacross-countrymul-
tivariateregressionanalysis.Wespecifyeithertotalmeatorruminantmeatasthedependentvariableandwe
considerabroadrangeofpotentialdriversofmeatconsumption.Thecombinationofexplanatoryvariableswe
useisnewforthistypeofanalysis.Inaddition,weestimatetherelativeimportanceofthedifferentdrivers.We
findthatincomepercapitafollowedbyrateofurbanisationarethetwomostimportantdriversoftotalmeat
consumptionpercapita.Incomepercapitaandnaturalendowmentfactorsaremajordriversofruminantmeat
consumptionpercapita.OtherdriversareWesternculture,Muslimreligion,femalelabourparticipation,eco-
nomic and social globalisation and meat prices. The main identified drivers of meat demand are difficult to
influencethroughdirectpolicyintervention.Thus,actingindirectlyonconsumers’preferencesandconsumption
habits(forinstancethroughinformation,educationpolicyandincreasedavailabilityofready-madeplantbased
products)couldbeofkeyimportanceformitigatingtheriseofmeatconsumptionpercapitaallovertheworld.
