This chapter reviews the interlinked and complementary study of literary, epigraphic, and material sources that allows one to understand the slow diffusion of bread as the preferred mode of grain consumption in antiquity without by any means being the only mode. It then discusses about the food and cooking by way of these restaurants, which appear to have the plebs as their principle customer base, the imperial visits recalled by Suetonius notwithstanding.
Le présent chapitre est divisé en deux ensembles qui s’enrichissent l’un l’autre. D’une part, l’étude conjointe et complémentaire des sources littéraires, épigraphiques et matérielles permet d’appréhender la lente diffusion du pain comme mode privilégié – sans, loin de là, rester le principal pendant l’Antiquité – de consommation des céréales ; d’autre part, nous aborderons l’alimentation et la cuisine par le biais de ces ‘restaurants’ qui paraissent avoir eu la plèbe comme clientèle préférentielle, en dépit de la fréquentation impériale rappelée par Suétone.
